Ingredients
- 318 grams all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon fine sea salt
- 226 grams unsalted butter, cool room temperature
- 250 grams granulated sugar, plus extra for rolling
- 1 large egg
- 1 large egg yolk
- 2 teaspoons pure vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper or silicone mats.
- In a medium bowl, whisk together the flour, baking powder, and sea salt until the leavening agent is evenly distributed.
- Using an electric mixer with a paddle attachment, beat the cool room-temperature butter and granulated sugar for 2 to 3 minutes until the mixture is pale and fluffy.
- Scrape down the sides of the bowl and add the whole egg, the extra egg yolk, and the vanilla extract, beating until fully combined and creamy.
- Set the mixer to the lowest speed and slowly add the dry ingredients, mixing only until the white streaks of flour have just disappeared.
- Portion the dough using a 3-tablespoon cookie scoop, roll into smooth balls, and coat each ball thoroughly in a shallow dish of extra sugar.
- Arrange the dough balls on the prepared sheets about 2 inches apart and gently flatten each one slightly with the bottom of a flat measuring cup.
- Bake for 10 to 12 minutes until the edges are just set but the centers remain soft, then let them rest on the sheet for 5 minutes before moving to a wire rack.
Notes
For the most consistent results, always weigh your ingredients with a digital scale rather than using volume measurements. To keep these cookies soft for several days, store them in an airtight container once they have cooled completely, adding a slice of white bread to the container to maintain moisture.
